It seems that cupcakes are the *in* thing, and I have to say ….. they make a great gift for any occasion. Decorating the box that you give them in can be lots of fun, and as Norine shows us, it looks fabulous too. I am excited that we are now carrying the single kraft with window cupcake boxes (with insert) and the white one dozen cucpcake boxes (with insert) in the store.

Yummy! And here is Norine’s recipe for these cupcakes.
Coconut Snowball Cupcakes
1 pkg white cake mix
1 C water
3/4 C Cream of Coconut (in the cocktail/drinks aisle at the grocery store.)
3 egg whites
Combine in large bowl, beat on low for 30 seconds, and on medium for 2 mins. Bake according to the pkg directions for cupcakes.
1 pkg cream cheese
1 tbsp sugar (or to taste)
2 (or more) blocks white chocolate (melted in microwave)
1 C whip cream (whipped, with 1 tsp almond extract added)
1/4 C Cream of Coconut
Cream the cream cheese in a bowl with electric mixer. Add sugar, melted chocolate and cream of coconut and beat till smooth. Beat whip cream (with extract added) till stiff. Fold into cream cheese mixture and frost cupcakes. Sprinkle coconut and white crystal cake topping on top of cupcakes and watch them disappear!
